Ingredients
- 100g Merchant Gourmet Red & White Quinoa
- 100g oats
- 2 bananas
- 2 tbsp chia seeds
- 2 tbsp cashew butter
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 80g fresh blueberries
Instructions
- Preheat the oven to 150C
- Mix the chia seeds with 6 tbsp water and leave to thicken up for 5-10 minutes
- Mash the bananas in a bowl until smooth, then add the maple syrup, cashew butter and vanilla extract. Stir well
- Add the oats, Merchant Gourmet Quinoa and chia seed mixture to the bowl. Stir everything together
- Add the blueberries to the mixture, stirring carefully
- Line a baking tray with baking paper then pour in the breakfast bar mixture. Spreading out evenly
- Bake in the oven for 20-25 minutes
- Leave to cool for at least 15 minutes before cutting into squares and enjoying
