Roasted Cauliflower with Glorious Grains

Fight against food waste with this delicious, zero waste recipe. Make sure you use the entire cauliflower (leaves and all), and get creative with any leftover veg!

Ingredients

  • 1 large cauliflower
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 x 250g pouch of Merchant Gourmet Glorious Grains
  • 1 lemon
  • 1 pomegranate, seeds removed
  • Handful of chopped coriander

Instructions

  1. Heat the oven to 200C.
  2. Separate your cauliflower head and leaves - zero waste please!
  3. Chop up the head into large florets and separate the leaves.
  4. Place florets and leaves on a large baking tray. Toss with a glug of olive oil, spices, salt and pepper.
  5. Roast for 20 minutes until florets are soft and golden and leaves are crispy.
  6. Once roasted, heat the Glorious Grains in the microwave.
  7. Mix in a drizzle of olive oil, a squeeze of lemon juice, chopped coriander and any other salad or veggies you’ve got in the fridge. We love radish, cucumber and red onion!
  8. Season with salt and pepper, add a few spices if you fancy.
  9. To serve, place your herby grains on a plate, top cauliflower florets and crispy leaves. Finish with a handful of pomegranate seeds and any remaining coriander, tuck in!

Good to know!

Other tasty toppings include plant-based feta, a drizzle of tahini or chilli oil.
