All new cook-alongs with Alex Mackay
We’ve been hard at work these past few months on a series of new video cook-along recipes hosted by our cook, Alex Mackay. Our latest video recipe, ‘Creamy Pollock Puy Lentil and Mangetout Fish Pie’ features our Ready To Eat Puy Lentils, which are a favourite of ours and are super-easy and convenient to cook.
The recipe is really simple and uses every-day ingredients to create a lovely, rich-tasting dish. The recipe features fillets of sustainable Pollock which is a delicious white fish and when combined with the creaminess of the pie and earthiness of the Puy lentils it’s a perfect harmony.
Prior to the making of this video we were deeply inspired by the work of Hugh Fearnley-Whittngstall and his ongoing campaign supporting sustainable fish, Hugh’s Fish Fight. His poignant series back in early 2011 showed how fishermen in the North Sea are forced to discard half their catch back into the sea (already dead) because of crazy EU quota laws.
As we highlight in this video, the sustainable Pollock we use in this recipe is a delicious white fish which, if we didn’t know any better would assume to be cod or similar mainstream fish.
Alex Mackay, Merchant Gourmet’s Cook: “After seeing Hugh’s Fish Fight on TV, I realised how lazy I’d become in using the same fish all of the time and how little I looked towards the future. I’ve since discovered Dabs, Megrim sole, Witch Sole, Coley, Pouting and for this recipe, Pollock. To start with, my wife picked me up a few fillets and had I not known, I would have sworn it was a very good fillet of cod. It even goes one better, as the flesh is slightly firmer than that of cod and easier to work with. If you have yet to try it, this glammed up, one pan Pollock pie is a great place to start. If your fishmonger or supermarket doesn’t sell Pollock, keep asking for it until they do."
