Balsamic Roasted Vegetables
The perfect accompaniment to any grilled fish or meat.
Ingredients:
* 90ml Art Deco Balsamic Vinegar
700g prepared Mediterranean style vegetables (e.g. peppers, courgettes, aubergines, fennel, red onions etc.)
6 garlic cloves, crushed
90ml extra virgin olive oil
coarse sea salt and cracked black pepper
HOW TO COOK IT

1. Mix the garlic, olive oil and balsamic vinegar together and roll the vegetables in the mix.

2. Meanwhile place a heavy roasting tray in a very hot oven (approx. 225C/450F/Gas Mark 8).

3. Put the vegetables in the hot tray, season with the sea salt and cracked pepper and put in the oven (reduce the heat to 200C/400/Gas Mark 6) and cook until coloured and tender.
