Chestnut and Apple Stuffing
Make your own stuffing this Christmas - it will make all the difference to your festive feast.
Ingredients:
* 2 x 200g packet Whole Chestnuts
* or alternatively 2 x 200g jar Organic Whole Chestnuts
25g butter
225g onion, finely chopped
125g fresh white breadcrumbs
225g sausagemeat
4 tbsp parsley, chopped
1 tsp dried thyme
225g cooking apple, peeled, cored and finely chopped
salt and pepper
HOW TO COOK IT

1. Melt the butter in a pan, add the onion and cook until soft and golden, transfer to a bowl and allow to cool.

2. Roughly chop the chestnuts and stir into the onion with the breadcrumbs. Break up the sausagemeat, add to the bowl with the herbs and apple, season with salt and pepper and mix well. Not suitable for freezing.

3. This quantity of stuffing will be sufficient for a 8 - 10 lb. oven-ready turkey.

4. To use the stuffing, lift the flap of skin at the neck end of the bird and fill with stuffing, do not pack too tightly. Mould the skin over the top, tuck the excess skin underneath the bird and secure with a small metal skewer. Remaining stuffing can be spooned into an ovenproof dish and cooked for 40 minutes at the end of the cooking time for the turkey.
