Mediterranean Pasta Salad with Pesto & Balsamic dressing
An easy to assemble dish combining the Mediterranean flavours of sun dried tomatoes, olives and green pesto.
Ingredients: * 60g Pesto Alla Genovese
* 115g Sun Dried Tomatoes In Oil
110g dried pasta
60g black olives, pitted
1 red onion, finely chopped
1 tbsp balsamic vinegar
90ml extra virgin olive oil
salt and pepper
HOW TO COOK IT
1. Cook and drain pasta.
2. To make the dressing, beat together the pesto, balsamic vinegar and olive oil and season well.
3. Combine all the ingredients together with the dressing, check seasoning and serve.
