Mixed Rice and Chickpea Salad

Mixed Rice and Chickpea Salad
A healthy rice and chickpea salad drizzled with a spicy dressing.
Ingredients:
* 175g White Red & Wild Rice
3 small courgettes
oil for brushing
400g can chickpeas, rinsed and drained
4 tomatoes, diced
5 spring onions, finely sliced.

Dressing;
3 tbsp olive oil
2 tbsp lemon juice
1 garlic clove, crushed
½ tsp paprika
¼ tsp ground cumin
2 large pinches chilli powder
HOW TO COOK IT

1. Cook the rice as directed on the pack, drain and set aside.

2. Diagonally slice the courgettes, brush with oil and sprinkle with a little salt.

3. Heat a griddle pan until very hot, place the courgettes in the pan and sear for about 1 minute on each side. Remove from the pan and cool, then add to the rice.

4. Fold in the chickpeas, tomatoes and spring onions.

5. Whisk together the ingredients for the dressing, season with salt and pepper, pour onto the salad, add parsley and toss together.
