Savoury Provencal Pancakes with SunBlush® Tomatoes
Savoury pancakes filled with soft goat's cheese, spicy chorizo sausage, SunBlush® Tomatoes and black olives.
Ingredients:
* 300g SunBlush® Tomatoes
5 large eggs
4 tbsp milk
2 tbsp flat leaved parsley, chopped
1 tbsp chives, chopped
salt to taste
pepper to taste
70g chorizo, thinly sliced into strips
150g soft goat's cheese
50 black olives, stoned and chopped
HOW TO COOK IT

1. To make the pancakes, beat the eggs and milk together, season well and beat in the herbs.

2. Heat a small non-stick frying pan, approximately 15cm and brush with oil from the SunBlush® Tomatoes. Add 4 tbsp of the egg mixture and allow it to spread in the pan, cook over a medium heat until just set. Turn over with a fish slice and cook for a few seconds, turn onto a plate.

3. Continue to make the pancakes, placing a piece of greaseproof paper between each one as it is turned onto the plate.

4. To assemble, drain the SunBlush® Tomatoes and divide between the pancakes, placing them over one third of the pancake area. Top with the chorizo, blobs of the goat's cheese and a scattering of chopped olives.

5. Fold the pancakes into a cornet shape and serve warm at room temperature.
