Lisa took part in Recipe Challenge 2003 and created a dish of Plaice fillets filled and rolled with a lemon pesto stuffing, topped with melted mozzarella and parmesan. |

Ingredients: * 50g SunBlush® Tomatoes
1 small onion, finely chopped
50g butter
120g white breadcrumbs
Grated zest of 2 lemons
2 tbsp pesto
1 egg yolk
1tsp sugar
4 large plaice fillets, skinned
400g can tomatoes
1 clove garlic, crushed
1 tbsp olive oil
50ml white wine
75g mozzarella, grated
25g parmesan, grated

HOW TO COOK IT |
|
|
|
1. Heat the oven to 180C/350F/Gas Mark 4
2. Fry the finely chopped onion in butter until softened. Add the breadcrumbs, lemon zest, pesto and egg yolk. Season to taste and mix together.
3. Place the washed plaice fillets skin side up and divide the stuffing equally between them. Roll up.
4. Make and blitz a tomato sauce using canned tomatoes, garlic, olive oil and wine. Spoon into the base of a serving dish, add the roughly chopped SunBlush® tomatoes.
5. Place the fish parcels on top of the tomato sauce and sprinkle with mozzarella and Parmesan.
6. Bake in a preheated oven for 15 minutes and finish under the grill for a crispy brown appearance. |
