Goats Cheese Bruschetta with SunBlush® Tomatoes & Peppers
The intense flavours of SunBlush® Tomatoes and Peppers are perfectly complimented with warmed, goat's cheese.
Ingredients:
*100g SunBlush® Tomatoes
*100g SunBlush® Peppers
1 small red onion, finely sliced
salt, pepper and cayenne to taste
200g or 1 small log of goat’s cheese
4 long slices of baguette cut on an angle
1 handful of basil leaves, snipped
HOW TO COOK IT

1. Mix together the finely sliced red onion and the SunBlush® tomatoes and peppers. Mix and season with the salt, black pepper and cayenne.

2. Place the baguette slices under a hot grill and toast lightly until the baguette just begins to colour.

3. Brush one side of the toasted baguette with some of the oil from the SunBlush® peppers or tomatoes and top with a slice of the goats cheese. Place back under the grill until the cheese just begins to melt.

4. Remove from the grill and top with the SunBlush® mixture. Return to the grill for the final time for 1 minute.

5. Garnish with the snipped basil leaves and serve warm.
