Spaghetti with SunBlush® Tomatoes and Rocket
This quick mid-week meal works wonderfully when topped with grated Parmesan and accompanied with thick crusty bread.
Ingredients:
*240g tub SunBlush® Tomatoes
175g spaghetti
rocket
freshly ground black pepper
HOW TO COOK IT

1. Cook the spaghetti in boiling salted water as instructed on the packet.

2. Drain well and return to the pan.

3. Drain the oil form the SunBlush® Tomatoes and keep to one side. Stir the tomatoes through the spaghetti along with a handful of rocket leaves.

4. Divide the spaghetti between two serving dishes and drizzle over some of the saved oil.

5. Season to taste and decorate with a sprig of rocket.
