Steak with Porcini Mushroom Sauce

Steak with Porcini Mushroom Sauce
This creamy mushroom sauce is so versatile you can use it in pasta dishes, topped on chicken breasts or even as an accompamiment to fish!
Ingredients:
* 25g Dried Porcini Mushrooms
1 pint hot chicken stock
2-3 tbsp olive oil
30g shallots, finely chopped
2 garlic cloves, crushed
150ml white wine
4 medium steak portions
150ml double cream
salt and pepper
HOW TO COOK IT

1. Rehydrate the mushrooms in the chicken stock as directed on pack.

2. Sauté the shallots and garlic in the oil until starting to colour. Add the mushrooms, cook for two minutes and add the wine, reducing by two thirds, then add the strained stock.

3. Meanwhile on a hot griddle, cook the steaks according to taste.

4. Reduce the stock by half, add the cream and simmer for one minute. Season to taste.

5. Serve immediately with chunky chips or seasonal vegetables.
