Seared Tuna with Sun Dried Tomato Relish
The freshness and zing of the relish is a perfect accompaniment to any fish - although seared tuna is a favourite of ours!
Ingredients:
* 50g sun-dried tomatoes rinsed, re-hydrated and roughly chopped
* 3 tbsp garlic infused olive oil
4 tuna steaks
175g fresh ripe tomatoes, finally chopped
1 tbsp lime juice
1 fresh red chilli, seeded and chopped (optional)
1 tbsp finely chopped fresh flat leaf parsley
pinch of sugar
salt and pepper to taste
HOW TO COOK IT

1. Heat a griddle pan and sear the tuna on each side for about 2 minutes so it remains pink inside

2. Meanwhile, combine all the other ingredients to make the relish

3. Serve the tuna and relish with some rocket leaves and lime wedges
