Spiced Vegetable Pilaff |

Ingredients: *2 (125g) sachets basmati rice and golden pearl lentils
*2 tbsp garlic infused olive oil
*1 dried chilli, chopped
*75g mi-cuit plums, stoned and quartered
2 red onions, sliced
400g butternut squash, washed and deseeded
1 red pepper, deseeded and chopped
1 tsp each ground cinnamon, cumin and coriander or harissa paste
200ml vegetable stock
3 tbsp chopped flat parsley

HOW TO COOK IT |
|
|
|
1. Bring a large pan of water to the boil, empty in the sachets of rice and lentils and simmer for 10mins or until just tender. Drain and set aside.
2. Cut the unpeeled squash into chunks. Heat the oil in a large frying pan, add the onions, squash and peppers and sauté over a high heat for 6-8mins or until golden. Add the chilli, spices and plums and stir well. Pour in the stock, season well then bring to the boil. Cover and simmer for 10mins or until tender.
3. Stir the cooked rice and lentils into the vegetable mixture and season to taste. Scatter over the parsley and serve. |
