Spicy Penne with Chorizo & Peas
Want to make a quick and tasty mid-week meal – this is the perfect solution!
Ingredients:
*400g penne
*2 tbsp garlic infused olive oil
*2 dried chillies, chopped
60g Mi-Cuit tomatoes
50g frozen peas
1 red onion, sliced
110g chorizo sausage, skinned and sliced
150ml red wine
1 (395g) can cherry tomatoes
HOW TO COOK IT

:

1. Bring a large pan of water to the boil, then cook the pasta for 8 mins, stir in the peas and return to the boil for a further 2 mins.

2. Meanwhile, heat the oil in a large frying pan add the onions and sauté for 3 mins. Add the sausage, chillies and Mi-Cuit tomatoes, sauté for 3 mins.

3. Add the wine and simmer for 2 mins. Finally stir in the canned tomatoes, bring to the boil and simmer for 3-4mins.

Season to taste.

4. Drain the pasta and peas, then toss through the sauce and serve.
