Blini Bites
Simple toppings make these blinis both impressive and delicious. Serve with a glass of Champagne - a sure winner with all your guests.
Ingredients:
2 (120g) packet Merchant Gourmet mini blinis - gently grilled both sides

Smoked Salmon, Crème Fraiche & Dill:
50g sliced smoked salmon
2 tbsp crème fraiche
fresh dill sprigs to garnish

Goats Cheese and SunBlush:
50g Merchant Gourmet soft spreadable goats cheese
8 Sunblush Tomatoes
chopped flat leaf parsley to garnish

Mascarpone & Keta Salmon Caviar:
50g mascarpone
1 tbsp Keta Salmon Caviar
snipped chives to garnish

Chocolate Toffee & Banana:
8 heaped tsp dulce de leche chocolate toffee
16 thin slices of banana
plain chocolate shavings to scatter
HOW TO COOK IT

Smoked Salmon, Crème Fraiche & Dill:
Top each with a little ruffle of smoked salmon, a small spoonful of crème fraiche and a sprig of dill. Season with a little black pepper.

Goats Cheese and SunBlush:
Spread each with some soft goats cheese then top with a SunBlush Tomato and sprinkle with a little chopped flat leaf parsley

Mascarpone & Keta Salmon Caviar:
Top each with a small spoonful of mascarpone then with a small spoonful of keta. Garnish each with snipped chives and season with a little black pepper to serve.

Chocolate Toffee & Banana:
Top each with a tsp of chocolate toffee and then arrange 2 thin slices of banana on each. Scatter with chocolate shavings to serve.
