Poached Seasonal Fruit in Spiced Black Rice Vinegar

Poached Seasonal Fruit in Spiced Black Rice Vinegar
Infused with cinnamon, star anise, cloves and manadarin oranges, the vinegar created a wonderful, sweet poaching liquid.
Ingredients:
*100 mls Chef's Black Rice Spiced Vinegar
300gm caster sugar
300ml water
200gms good quality dried fruit (eg apricot, pear, apple, raisins etc)
200gms of freah, seasonal fruit, peeled and cored into large chunks (i.e pears, cherries or apples etc)
HOW TO COOK IT

1. Mix togther the sugar, water and vinegar in a large pan.

2. Simmer for 5 mins until the sugar has dissolved.

3. Add the fruit and poach gently for around 30 minutes until the fruit is soft.

4. Serve with cinnamon ice cream or creme fraiche.
