Poached Seasonal Fruit in Spiced Black Rice Vinegar

Ingredients:
- 100ml Chef's Black Rice Spiced Vinegar
- 300g caster sugar
- 300ml water
- 200g good quality dried fruit (eg apricot, pear, apple, raisins etc)
- 200g of freah, seasonal fruit, peeled and cored into large chunks (i.e pears, cherries or apples etc)
How to cook it:
- Mix togther the sugar, water and vinegar in a large pan
- Simmer for 5 mins until the sugar has dissolved
- Add the fruit and poach gently for around 30 minutes until the fruit is soft
- Serve with cinnamon ice cream or creme fraiche
