Poached Seasonal Fruit in Spiced Black Rice Vinegar

Ingredients:

  • 100ml Chef's Black Rice Spiced Vinegar
  • 300g caster sugar
  • 300ml water
  • 200g good quality dried fruit (eg apricot, pear, apple, raisins etc)
  • 200g of freah, seasonal fruit, peeled and cored into large chunks (i.e pears, cherries or apples etc)

How to cook it:

  1. Mix togther the sugar, water and vinegar in a large pan
  2. Simmer for 5 mins until the sugar has dissolved
  3. Add the fruit and poach gently for around 30 minutes until the fruit is soft
  4. Serve with cinnamon ice cream or creme fraiche
