James’ Chocolate Chestnut Fondants

Serves: 8

Ingredients:

  • 50g melted butter
  • 2 tsp cocoa powder
  • 200g dark chocolate
  • 150g chestnut purée
  • 150g butter
  • 200g golden caster sugar
  • 3 eggs and 3 yolks
  • 150g flour

Method

  1. Brush melted butter all over the inside of 8 ramekins. Place the ramekins in the fridge or freezer.
  2. Place a bowl over a pan of simmering water, then slowly melt the chocolate and butter together.
  3. In a separate bowl whisk the eggs and yolks together with the sugar and chestnut purée until thick and pale. Sift the flour into the eggs, then beat together.
  4. Pour the melted chocolate into the egg mixture in thirds, beating well between each addition.
  5. Heat oven to 200C.
  6. Evenly divide the mixture between the ramekins and place the fondants on a baking tray and cook for 10 mins until the tops have formed a crust and remove from the oven.
  7. Loosen the fondants and tip each one onto a plate.
  8. Enjoy with a scoop of ice cream.
