James’ Chocolate Chestnut Fondants

Serves: 8
Ingredients:
- 50g melted butter
- 2 tsp cocoa powder
- 200g dark chocolate
- 150g chestnut purée
- 150g butter
- 200g golden caster sugar
- 3 eggs and 3 yolks
- 150g flour
Method
- Brush melted butter all over the inside of 8 ramekins. Place the ramekins in the fridge or freezer.
- Place a bowl over a pan of simmering water, then slowly melt the chocolate and butter together.
- In a separate bowl whisk the eggs and yolks together with the sugar and chestnut purée until thick and pale. Sift the flour into the eggs, then beat together.
- Pour the melted chocolate into the egg mixture in thirds, beating well between each addition.
- Heat oven to 200C.
- Evenly divide the mixture between the ramekins and place the fondants on a baking tray and cook for 10 mins until the tops have formed a crust and remove from the oven.
- Loosen the fondants and tip each one onto a plate.
- Enjoy with a scoop of ice cream.
