Joe's Mixed Grain Tagine

Ingredients:

  • 250g of Merchant Gourmet mixed grains
  • Two cloves of garlic, minced
  • olive oil (or any oil) for pan-frying chicken
  • one chicken, cut into serving sized pieces
  • quarter teaspoon black pepper
  • quarter teaspoon ground ginger
  • pinch of saffron
  • one teaspoon turmeric
  • one stick of cinnamon
  • one teaspoon cumin
  • one teaspoon basil
  • one teaspoon oregano
  • two onions, finely chopped
  • two cups chicken stock
  • one cup green olives
  • juice of half a lemon
  • salt, to taste
  • 6 chopped Carrots
  • 6 chopped potatoes
  • 1 cup of frozen peas.
  • Half a tin of tomatoes

Method:

  1. Mix the garlic, some black pepper, and a spoonful of oil. Rub the chicken with the mixture and set aside for a few hours or overnight
  2. Heat the oil in a tagine. Add onions. Stir-fry over high heat for a few minutes.  Fry the chicken until all sides begin to brown
  3. Add spices
  4. Add the lemon juice, chopped carrots, chopped potatoes, frozen peas and half a tin of tomatoes
  5. Add chicken stock, or water. Bring to boil. Reduce heat. Cover, but leave a crack for steam to escape. Simmer over low heat for thirty five minutes.
  6. Add olives and preserved lemons. Add salt and adjust seasoning. Continue to simmer.
  7. Place pouch of Mixed grains into the microwave for one minute.
  8. Place Mixed grains onto plate
  9. Serve chicken on top of mixed grains and cover with sauce.
