Joe's Mixed Grain Tagine

Ingredients:
- 250g of Merchant Gourmet mixed grains
- Two cloves of garlic, minced
- olive oil (or any oil) for pan-frying chicken
- one chicken, cut into serving sized pieces
- quarter teaspoon black pepper
- quarter teaspoon ground ginger
- pinch of saffron
- one teaspoon turmeric
- one stick of cinnamon
- one teaspoon cumin
- one teaspoon basil
- one teaspoon oregano
- two onions, finely chopped
- two cups chicken stock
- one cup green olives
- juice of half a lemon
- salt, to taste
- 6 chopped Carrots
- 6 chopped potatoes
- 1 cup of frozen peas.
- Half a tin of tomatoes
Method:
- Mix the garlic, some black pepper, and a spoonful of oil. Rub the chicken with the mixture and set aside for a few hours or overnight
- Heat the oil in a tagine. Add onions. Stir-fry over high heat for a few minutes. Fry the chicken until all sides begin to brown
- Add spices
- Add the lemon juice, chopped carrots, chopped potatoes, frozen peas and half a tin of tomatoes
- Add chicken stock, or water. Bring to boil. Reduce heat. Cover, but leave a crack for steam to escape. Simmer over low heat for thirty five minutes.
- Add olives and preserved lemons. Add salt and adjust seasoning. Continue to simmer.
- Place pouch of Mixed grains into the microwave for one minute.
- Place Mixed grains onto plate
- Serve chicken on top of mixed grains and cover with sauce.
