Ryan's Hot & Sour Soup

Ingredients:

  • 250g of Merchant Gourmet Mixed Grains
  • 25g dried shittake mushrooms (or use dried porcini or dried mixed mushrooms), rehydrated in 500ml water, with mushroom stock set aside
  • 1 red chilli, sliced
  • Thumb of fresh ginger, chopped
  • 1 Spring onion, sliced
  • 50ml Merchant Gourmet Spiced Black Rice Vinegar
  • 15ml White wine vinegar
  • 15ml Soy sauce
  • 2ml Vegetable oil

Method:

  1. Fry off the chilli and ginger in hot vegetable oil for 30 seconds
  2. Add the rehydrated shittake mushrooms and fry for a further 30 seconds
  3. Pour in the Spiced Black Rice Vinegar, white wine vinegar, soy sauce and mushroom stock and boil for 1 minute
  4. Add the mixed grains and continue to boil for another 30 seconds
  5. Serve with sliced spring onion
