Ryan's Hot & Sour Soup

Ingredients:
- 250g of Merchant Gourmet Mixed Grains
- 25g dried shittake mushrooms (or use dried porcini or dried mixed mushrooms), rehydrated in 500ml water, with mushroom stock set aside
- 1 red chilli, sliced
- Thumb of fresh ginger, chopped
- 1 Spring onion, sliced
- 50ml Merchant Gourmet Spiced Black Rice Vinegar
- 15ml White wine vinegar
- 15ml Soy sauce
- 2ml Vegetable oil
Method:
- Fry off the chilli and ginger in hot vegetable oil for 30 seconds
- Add the rehydrated shittake mushrooms and fry for a further 30 seconds
- Pour in the Spiced Black Rice Vinegar, white wine vinegar, soy sauce and mushroom stock and boil for 1 minute
- Add the mixed grains and continue to boil for another 30 seconds
- Serve with sliced spring onion
