Halloumi Kebabs with Lemon Herby Giant Couscous

Ingredients:
- 110g Wholewheat Giant Couscous
- 250g halloumi
- 1 red pepper
- 1 courgette
- 240g SunBlush® Tomatoes, drained (save and use the oil)
- Large bunch of parsley, roughly chopped
- Handful of mint, roughly chopped
- Juice of half a lemon
- Salt and pepper to season
Method:
- Cut the halloumi, pepper and courgette into chunks and arrange on skewers
- Cook the Giant Couscous according to instructions on the pack. Drain and run cold water through until cool all the way through
- In a mixing bowl mix together the giant couscous, 4 tbsp of oil from the SunBlush® tomatoes pot, the herbs, lemon juice and season with salt and pepper
- Griddle/grill kebabs for 5-7 minutes on each side until the halloumi is golden (Alternatively grill on the bbq - halloumi cheese is great for this as it doesn’t ooze and run like most cheeses!)
- Serve the kebabs with a good helping of the Giant Couscous salad
