Halloumi Kebabs with Lemon Herby Giant Couscous

Ingredients:

  • 110g Wholewheat Giant Couscous
  • 250g halloumi
  • 1 red pepper
  • 1 courgette
  • 240g SunBlush® Tomatoes, drained (save and use the oil)
  • Large bunch of parsley, roughly chopped
  • Handful of mint, roughly chopped
  • Juice of half a lemon
  • Salt and pepper to season
     

Method:

  1. Cut the halloumi, pepper and courgette into chunks and arrange on skewers
  2. Cook the Giant Couscous according to instructions on the pack. Drain and run cold water through until cool all the way through
  3. In a mixing bowl mix together the giant couscous, 4 tbsp of oil from the SunBlush® tomatoes pot, the herbs, lemon juice and season with salt and pepper
  4. Griddle/grill kebabs for 5-7 minutes on each side until the halloumi is golden (Alternatively grill on the bbq - halloumi cheese is great for this as it doesn’t ooze and run like most cheeses!)
  5. Serve the kebabs with a good helping of the Giant Couscous salad
