Mexican Beluga Lentil and Pepper Wraps

Ingredients:
- 6 Sweet peppers, (a mixture of red, green & yellow)
- 1 large onion
- 1 sachet fajita seasoning mix
- 8 tortilla wraps
- 250g MG ready to eat Beluga lentils
- 10 SunBlush tomatoes
- 3 tbsp oil for frying
- 200-300g Tomato salsa (the fresh salsa near dips in the supermarket is best)
- 230g fresh guacamole
- 150ml soured cream
- 200g cheddar cheese, grated
Method:
- Slice the peppers and onion into strips with about a 2 cm width.
- Over a high heat, heat the oil in a wok or large frying pan for 1 minute.
- Add the vegetable to the hot pan and fry for a few minutes, continuously stirring, until slightly soft.
- Add the beluga lentils, fajita seasoning and SunBlush tomatoes and fry for another 3 minutes, continuously stirring.
- Meanwhile heat the wraps according to instructions on pack.
- Take your pepper and lentil mix to the table along with the heated wraps, avocado, soured cream, grated cheese and salsa, and tuck in!
