New Potato, Baby Spinach and Porcini Warm Salad

Ingredients:
- 300g salad or new potatoes
- 1 tbsp olive oil
- 1 large onion, finely chopped
- 2 garlic cloves, crushed
- 250g shitake or brown cap mushrooms
- 50g Merchant Gourmet Dried Porcini Mushrooms
- 200g baby spinach, washed
- Handful of basil leaves or Greek basil
- Sea salt and ground black pepper
How to cook it:
- Cover the Porcini Mushrooms in boiling water and set aside for 15 minutes
- Cook the potatoes in boiling salted water until just tender, about 10-15 minutes, drain and set aside
- In a large pan heat the oil and cook the onions and garlic until soft . Add the shitake/brown cap mushrooms and the drained porcini and stir over heat for 5 minutes or until the mushrooms are tender. Add the spinach and toss for a few minutes until just wilted
- Add the basil, season well and serve
