Ingredients:

  • 300g salad or new potatoes
  • 1 tbsp olive oil
  • 1 large onion, finely chopped
  • 2 garlic cloves, crushed
  • 250g shitake or brown cap mushrooms
  • 50g Merchant Gourmet Dried Porcini Mushrooms
  • 200g baby spinach, washed
  • Handful of basil leaves or Greek basil
  • Sea salt and ground black pepper

How to cook it:

  1. Cover the Porcini Mushrooms in boiling water and set aside for 15 minutes
  2. Cook the potatoes in boiling salted water until just tender, about 10-15 minutes, drain and set aside
  3. In a large pan heat the oil and cook the onions and garlic until soft . Add the shitake/brown cap mushrooms and the drained porcini and stir over heat for 5 minutes or until the mushrooms are tender. Add the spinach and toss for a few minutes until just wilted
  4. Add the basil, season well and serve
