Pan Fried Halibut with Garlic, Chilli and Mi-Cuit Tomatoes

Ingredients:
- 3 tbsp olive oil
- 3 cloves garlic, finely sliced
- 1 red chilli, finely sliced
- 25g Mi-Cuit Tomatoes, finely sliced
- 150ml white wine
- 8 basil leaves, torn
- 1 tbsp olive oil
- 2 x 150g halibut fillets
- salt and pepper
How to cook it:
- Heat the olive oil in a small saucepan, add the garlic and red chilli and fry gently for 1-2 mins or until the garlic begins to go golden. Add the Merchant Gourmet Mi-Cuit Tomatoes and white wine and cook for a further 2 minutes. Remove from the heat and add the basil
- Heat the rest of the oil in a frying pan. Season the fish and lay it skin side down. Pan fry for 4 mins then turn over and cook for a further 3 mins on the other side
- Plate the fish up and pour over the Mi-Cuit Tomato dressing. Best served with rice and salad
