Pan Fried Halibut with Garlic, Chilli and Mi-Cuit Tomatoes

Ingredients:

  • 3 tbsp olive oil
  • 3 cloves garlic, finely sliced
  • 1 red chilli, finely sliced
  • 25g Mi-Cuit Tomatoes, finely sliced
  • 150ml white wine
  • 8 basil leaves, torn
  • 1 tbsp olive oil
  • 2 x 150g halibut fillets
  • salt and pepper

How to cook it:

  1. Heat the olive oil in a small saucepan, add the garlic and red chilli and fry gently for 1-2 mins or until the garlic begins to go golden. Add the Merchant Gourmet Mi-Cuit Tomatoes and white wine and cook for a further 2 minutes. Remove from the heat and add the basil
  2. Heat the rest of the oil in a frying pan. Season the fish and lay it skin side down. Pan fry for 4 mins then turn over and cook for a further 3 mins on the other side
  3. Plate the fish up and pour over the Mi-Cuit Tomato dressing. Best served with rice and salad
