Warm Chicken, Bacon, Spinach and Puy Lentil Salad

Ingredients:
- 2 chicken breasts, skins on
- 1 tbsp olive oil
- salt and pepper
- 50g bacon lardons
- 400g can Merchant Gourmet Puy Lentils, rinsed
- 100g baby leaf spinach, washed
- 50g SunBlush tomatoes, chopped
- 1 tbsp flat leaf parsley
- 1 tbsp extra virgin olive oil
- 1 tsp sherry vinegar
How to cook it:
- Heat a griddle pan until it is beginning to smoke. Rub the chicken breasts with olive oil and salt and pepper, and then lay on the griddle. Cook for 8 mins on each side, or until the chicken is nicely golden. Leave the chicken to rest for 10 mins in a warm oven
- Heat a non-stick frying pan on a medium heat. Add the bacon lardons and fry for 5 mins or until they become crisp and golden. Add the rinsed can of Merchant Gourmet Puy Lentils and warm for 2-3 mins. Stir in the spinach, SunBlush tomatoes, flat leaf parsley, extra virgin olive oil, sherry vinegar and seasoning. The spinach should begin to wilt but not cook through
- Slice the chicken horizontally. Serve the chicken on top of the warm salad
