Warm Chicken, Bacon, Spinach and Puy Lentil Salad

Ingredients:

  • 2 chicken breasts, skins on
  • 1 tbsp olive oil
  • salt and pepper
  • 50g bacon lardons
  • 400g can Merchant Gourmet Puy Lentils, rinsed
  • 100g baby leaf spinach, washed
  • 50g SunBlush tomatoes, chopped
  • 1 tbsp flat leaf parsley
  • 1 tbsp extra virgin olive oil
  • 1 tsp sherry vinegar

How to cook it:

  1. Heat a griddle pan until it is beginning to smoke. Rub the chicken breasts with olive oil and salt and pepper, and then lay on the griddle. Cook for 8 mins on each side, or until the chicken is nicely golden. Leave the chicken to rest for 10 mins in a warm oven
  2. Heat a non-stick frying pan on a medium heat. Add the bacon lardons and fry for 5 mins or until they become crisp and golden. Add the rinsed can of Merchant Gourmet Puy Lentils and warm for 2-3 mins. Stir in the spinach, SunBlush tomatoes, flat leaf parsley, extra virgin olive oil, sherry vinegar and seasoning. The spinach should begin to wilt but not cook through
  3. Slice the chicken horizontally. Serve the chicken on top of the warm salad
