Warming and wonderful, if comfort was a dish, this would be the one - eat this at midnight, midday or anytime you want something wholesome and cosy. The couscous becomes creamy in the same way as rice, but just much more quickly. Once cooked, leave the couscous to sit and swell for a couple of minutes, this lets the heat and maximum flavour get to the centre of each grain.

I first made this dish for one of Delia Smith’s Food and Wine Workshops just after I’d been taught to toast giant couscous. This adds a lovely nutty flavour, which in combination with the tender sweet potatoes makes this dish irresistible. I echo the nuttiness with a scatter of crunchy almonds on top. For all the elegant flavours it is also good and gutsy, just the thing for a cold day.
