Cream of Pumpkin Soup

Ingredients:

  • 2 tbsp Austrian Pumpkin Seed Oil
  • 500g pumpkin flesh
  • 600ml stock [beef, chicken or vegetable]
  • 40g butter
  • 50g onion, diced
  • 20g flour
  • 3 tbsp crème fraiche
  • 3 tbsp single cream
  • 1 tsp salt
  • white pepper to taste

How to cook it:

  1. Melt the butter in a large pan, add the chopped onion and brown. Add the pumpkin and sauté for 5 minutes. Add the flour and sauté for 1 minute
  2. Add the stock and simmer until the pumpkin is soft
  3. Puree the soup. Season with salt and pepper and stir in the cream and crème fraiche. Return to the pan and heat through
  4. Before serving, drizzle the soup with Pumpkin Seed Oil
