Cream of Pumpkin Soup

Ingredients:
- 2 tbsp Austrian Pumpkin Seed Oil
- 500g pumpkin flesh
- 600ml stock [beef, chicken or vegetable]
- 40g butter
- 50g onion, diced
- 20g flour
- 3 tbsp crème fraiche
- 3 tbsp single cream
- 1 tsp salt
- white pepper to taste
How to cook it:
- Melt the butter in a large pan, add the chopped onion and brown. Add the pumpkin and sauté for 5 minutes. Add the flour and sauté for 1 minute
- Add the stock and simmer until the pumpkin is soft
- Puree the soup. Season with salt and pepper and stir in the cream and crème fraiche. Return to the pan and heat through
- Before serving, drizzle the soup with Pumpkin Seed Oil
