Lamb and SunBlush® Tomato Samosas

Ingredients:

  • 150g SunBlush® Tomatoes, halved
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 225g minced lamb
  • 1 garlic clove, crushed
  • ½ tsp ground cinnamon
  • ¼ tsp allspice
  • 2 tbsp pine nuts, lightly toasted
  • 4 large sheets of filo pastry, approximately 110g grams
  • 40g unsalted butter, melted

How to cook it:

  1. Heat the oil in a large frying pan, add the onion and lamb and cook over a medium heat for 5 minutes, until the lamb has browned
  2. Add the garlic and spices and cook for 2 minutes more. Allow to cool, then mix in the SunBlush® Tomatoes and pine nuts
  3. Heat the oven to 190C/375F/gas mark 5
  4. Take the filo pastry and trim a little of each edge of the four sheets lengthways to create straight and even edges. Cut each sheet of pastry in half to make 8 strips. Cover the strips with damp kitchen paper while working on each pastry
  5. For each samosa, brush a strip of pastry with butter, place a heaped tablespoon of lamb filling at one end, slightly off centre. Lift the bottom right corner over the filling to meet the long edge, making a triangle. Continue to fold in this pattern until all pastry has been used. Place on a baking sheet
  6. Bake the samosas for 20-25 minutes until crisp and golden
