Roquito Chilli and Salami Pitta Pizza

Ingredients:
(makes 12 mini pizzas)
- 1 pack of 6 pitta breads.
- 4-5 MERCHANT GOURMET Roquito chilli peppers, sliced.
- 2 Mozzarella balls, torn (roughly 5cm in length).
- 80g salami, sliced.
- 250g tomato Pizza topping, (alternatively, use tomato puree).
Method:
1. Preheat oven to 200OC (400OF, gas mark 6).
2. Open each of the pitta breads out into 2 halves by easing them with a knife lengthways.
3. Spread the pizza topping on the insides of the pittas (about 1 tablespoon per pitta half). Arrange the sliced Roquito®, torn Mozzarella and salami on top of the sauce, and lay out the mini pizzas across baking sheets.
4. Place in the top of the oven and bake for about 8 minutes or until the base seems crispy and the mozzarella is melted.
5. If you’ve make too many, they are also delicious cold - wrap them up in tinfoil for great picnic snack food!
