Slow Cooked Pork and Lentil Stew

Ingredients:

  • 1kg pork shoulder
  • 250g Puy lentils
  • 2tbsp olive oil
  • 2 red onions, sliced
  • 4 cloves garlic, chopped
  • 1 inch piece of ginger, chopped
  • 1 chilli, diced
  • 1 can chopped tomatoes
  • 3 tbsp ready to eat dried apricots
  • 2 bay leaves
  • 2 chicken or vegetable stock cubes


How to cook it:

  1. Add the lentils to a pan of boiling water and simmer gently for 10 minutes. Drain and set aside.
  2. Trim the fat off the pork, and cut into 4cm chunks.
  3. Using half the oil, lightly fry the pork on the hob in a large pan to seal the meat and add to a slow cooker.
  4. Slice the red onions and add to the frying pan with the remaining olive oil and gently fry until golden.
  5. Next, add the chopped garlic, chopped ginger, diced chilli, the can of tomatoes and ready to eat dried apricots into the slow cooker.
  6. Add 2 bay leaves and the stock cubes to the slow cooker.
  7. Cook in a slow cooker on ‘low’ for around 3 hours or until the meat is tender.
  8. Add the pre-boiled lentils to the slow cooker 25mins before the end.
  9. Once cooked, we recommend leaving to rest for 20 minutes allowing the lentils to absorb all the wonderful flavours.
  10. Serve with some freshly steamed savoy cabbage and baby carrots, and enjoy!
