Slow Cooked Pork and Lentil Stew

Ingredients:
- 1kg pork shoulder
- 250g Puy lentils
- 2tbsp olive oil
- 2 red onions, sliced
- 4 cloves garlic, chopped
- 1 inch piece of ginger, chopped
- 1 chilli, diced
- 1 can chopped tomatoes
- 3 tbsp ready to eat dried apricots
- 2 bay leaves
- 2 chicken or vegetable stock cubes
How to cook it:
- Add the lentils to a pan of boiling water and simmer gently for 10 minutes. Drain and set aside.
- Trim the fat off the pork, and cut into 4cm chunks.
- Using half the oil, lightly fry the pork on the hob in a large pan to seal the meat and add to a slow cooker.
- Slice the red onions and add to the frying pan with the remaining olive oil and gently fry until golden.
- Next, add the chopped garlic, chopped ginger, diced chilli, the can of tomatoes and ready to eat dried apricots into the slow cooker.
- Add 2 bay leaves and the stock cubes to the slow cooker.
- Cook in a slow cooker on ‘low’ for around 3 hours or until the meat is tender.
- Add the pre-boiled lentils to the slow cooker 25mins before the end.
- Once cooked, we recommend leaving to rest for 20 minutes allowing the lentils to absorb all the wonderful flavours.
- Serve with some freshly steamed savoy cabbage and baby carrots, and enjoy!
