Eating Al Fresco

Eating Al Fresco

As soon as the warmer weather approaches, along comes the temptation of outdoor dining. Whether it’s BBQing with friends, picnics at the park or simply taking dinner out to the garden, eating al fresco is simply impossible to resist. We’ve comprised five recipes suited to this kind of service, great for accompanying grilled goods, easy to make beforehand and keep for later. Try for yourself!

Quinoa Tabbouleh with Sweet Potato Pakora

This vegan dish is a lovely and light take on a middle eastern classic. Top it with sweet potato pakora or falafel to level out the sweet and sour. The cucumber adds some vibrant colour and the perfect crunch. Prep takes just 15mins, no cooking necessary!

Herby Champagne Lentils, Pine Nuts & Parmesan

This salad has got it all. Nutty Champagne lentils, salty spinach, a creamy yogurt dressing, finished off by toasted, golden pine nuts. Swap out the yogurt and parmesan for a dairy alternative to make this dish vegan friendly.

Puy Lentil Paratha Flatbread

Created specially by Masterchef winner Saliha Mahmood Ahmed, these flatbreads are a moreish to say the least. Make your own raita and mango chutney from scratch, and serve hot or cold.

Roasted Cauliflower, Sweet Potato & Spanish Grains

The colours in this recipe speak for themselves. The cauliflower, sweet potato and chickpeas create the most wonderful mix of textures, making each mouthful as exciting as the last.

Fattoush Lentil Salad, Zataar Spiced Chips

Use our Tomatoey French Puy & Green Lentils in this salad, jam-packed full of veggies. The pitta chips add an unexpected crunch, and are the only ingredient that needs cooking.
