As soon as the warmer weather approaches, along comes the temptation of outdoor dining. Whether it’s BBQing with friends, picnics at the park or simply taking dinner out to the garden, eating al fresco is simply impossible to resist. We’ve comprised five recipes suited to this kind of service, great for accompanying grilled goods, easy to make beforehand and keep for later. Try for yourself!
This vegan dish is a lovely and light take on a middle eastern classic. Top it with sweet potato pakora or falafel to level out the sweet and sour. The cucumber adds some vibrant colour and the perfect crunch. Prep takes just 15mins, no cooking necessary!
This salad has got it all. Nutty Champagne lentils, salty spinach, a creamy yogurt dressing, finished off by toasted, golden pine nuts. Swap out the yogurt and parmesan for a dairy alternative to make this dish vegan friendly.
