Dried Porcini Mushrooms
Porcini mushrooms, dried to provide a more intense flavour than fresh mushrooms. Simple to prepare – just soak in freshly boiled water for around 10 minutes, then drain and use in stir-fries, classic pasta dishes and risottos.
Instructions
Soak the mushrooms in a bowl wth boiling water (for 50g of mushrooms around 500ml of boiling water will produce a balanced stock). Wait for 30 minutes then lift out the mushrooms and squeeze dry. Cook the mushrooms thoroughly before eating. Prior to using the liquid as a stock, allow to settle and gently pour out the liquid leaving any sediment behind.
