Beluga Lentil & Black Bean Chilli
This Beluga Lentil & black bean chilli is a great meal for the whole family. It’s so quick and easy to make, the ingredients are inexpensive, it can easily be adapted to make it less or more spicy, it’s suitable for vegans, vegetarians and those on a gluten free diet and it’s incredibly delicious and satisfying!
This chilli is not only lusciously yummy but it’s loaded with nutrients to keep you feeling happy and healthy too! The beluga lentils and black beans provide your body with plenty of protein, all important fibre and energy-boosting carbohydrates, the tomato gives you a healthy dose of vitamin C & K and the spices all have antioxidant properties!
Suitable for dairy-free, gluten-free, vegans and vegetarians
- 100g of Merchant Gourmet Simply Cooked Beluga Lentils
- 100g Black beans (rinsed and drained)
- 2 x 400g tins chopped tomatoes
- 180g mushrooms
- 4 tbsp tomato puree
- 1/2 red onion
- 2 cloves garlic
- 2 tsp ground cumin
- 1 tsp hot chilli powder
- 2 tsp paprika
- 8g fresh coriander (finely chopped)
- 1 tsp coconut oil for cooking
- Salt & pepper
- 2 x 250g pouches of Merchant Gourmet Simply Cooked Red & White Quinoa

1.Add the coconut oil to a saucepan over a low-medium heat and allow to melt
2.Dice the onion and add it to the pan once the coconut oil is melted
3.Chop the mushrooms and add them to the saucepan once the onion has begun to soften
4.Cook for 3-4 minutes then add in the garlic, ground cumin, hot chilli powder and paprika. Stir well and cook for 1-2 minutes
5.Add in the chopped tomatoes and tomato puree. Stir well and cook for 3-4 minutes
6.Add the beluga lentils, black beans and a little salt and pepper to the saucepan, then cover and allow to cook on a low heat for 10 minutes. Making sure it doesn’t boil as this can take away the delicious flavours
7.After 10 minutes add the chopped fresh coriander to the saucepan and allow to cook for a further 2-3 minutes
8.Serve with Merchant Gourmet Red & White Quinoa for a quick, easy, nutritious and delicious meal!
