Beluga Lentil, King Prawn and Avocado Salad

A quick and delicious salad using pre-cooked King prawns and our Beluga lentils for lunch or light dinner.

Beluga® Lentils

Ingredients

For the Dressing

  • 1 lime (cut into wedges to decorate)
  • 1 red chilli, finely diced
  • 1 lime (zest and juice)
  • 1 tbsp soy sauce
  • 1 tsp sesame oil

Instructions

1.Take the lentils out of the packet and add to a bowl, then slice the onions, add the chopped coriander

2.Make the dressing by mixing the chili, lime zest and juice, soy and sesame oil together, then mix half in with the lentils

3.Mix well, season and spoon into serving bowl. Then cut the avocado into cubes and mix with the prawns and the remaining dressing, then spoon on top of the salad
