Bo-Saam Inspired Wraps with Korean Grains, Chilli Sauce & Crunchy Vegetables
I first came across the idea of using leaves as a wrap on a Korean Airline flight and I love the tactile nature of it, the sort of food that is huge fun and inspires conversation as you pass ingredinets to each other while everyone makes their own version. For variety, the ‘bo-saam’ can be made with the grains alongside chicken, roast peppers, glazed aubergine, any cooked or leftover meat, or sun-dried tomatoes. Haloumi or mozzarella would be good too. To make it more practical if you want a portable lunch, you could use a whole grain wrap for the grains and vegetables in place of the lettuce.

Suitable for dairy-free, gluten-free, vegans and vegetarians
- 1 x 250g pouch Merchant Gourmet Korean-Style Grains
- 3 tbsp Chilli or Siracha sauce, plus plenty for serving (hoi-sin is also good)
- 1 large soft lettuce, leaves separated or 4 small wraps
- 100g radishes (1 average bunch or pack), sliced
- 50g mangetout
- 8 spring onions, finely sliced
- Zest and juice of 1 lemon
- 1 mild fresh chilli, de-seeded and finely chopped
- Salt and cayenne pepper

- Mix the grains with 3 tbsp chilli sauce
- Put bowls of the chilli sauce, lettuce, grains (hot or cold, up to you), radishes, spring onions and mangetout on your table.
- Wrap the grains cheerfully at your table with the sauce, radishes for crunch, mangetout for sweetness, lemon for freshness, spring onions and fresh chilli for a gentle bite.
