Bossam Inspired Wraps with Korean Grains, Chilli Sauce & Crunchy Vegetables

Bossam Inspired Wraps with Korean Grains, Chilli Sauce & Crunchy Vegetables

“I first came across the idea of using leaves as a wrap on a Korean Airline flight and I love the tactile nature of it, the sort of food that is huge fun and inspires conversation as you pass ingredients to each other while everyone makes their own version.  For variety, the ‘bossam’ can be made with the grains alongside chicken, roast peppers, glazed aubergine, any cooked or leftover meat, or sun-dried tomatoes. Haloumi or mozzarella would be good too. To make it more practical if you want a portable lunch, you could use a whole grain wrap for the grains and vegetables in place of the lettuce”
