Chestnut & Banana ‘Ice Cream’
For when you need something sweet, healthy and really easy! If you like the sound of banoffee pie combined with a Snickers bar, then this one’s for you. Suitable for gluten-free and vegans
- 4 bananas
- 2 tbsp peanut butter
- 4 dates
- 1 x 180g pouch of Merchant Gourmet Whole Chestnuts
- Put the banana slices in a freezer bag or arrange on a tray in a single layer and place in the freezer for a minimum of 2 hours, or until completely frozen.
- Puy the frozen bananas in a blender with the peanut butter and dates and blend until smooth. You might have to stop the blender and stir everything a few times until the mixture becomes smooth and creamy.
- Once it’s nearly ready, add the chestnuts and blitz a few times until combined but you still have a few chunks of chestnut. Serve immediately.
