Chickpea and Sweet Potato Curry

Suitable for dairy-free, vegans and vegetarians



1.This is a one pot wonder. Heat some oil in a pan under a gentle heat and add the chilli powder and ras el hanout. Allow the spices to cook out for 5 minutes

2.Add to this your onions, chilli, garlic, ginger paste, salt, pepper & cubed sweet potato. Allow this mixture to cook down for a further 5 minutes with the lid on

3.Next, add the chickpeas & spinach, when the spinach has wilted down, add the tinned tomatoes, coconut milk & the juice of one lime

4.Cook until the sweet potato is tender and cooked through

5.Simply warm the Merchant Gourmet Indian Flavoured Grains in the microwave for a minute or in a pan with a dash of water for a nutritious lunch or with your favourite Indian accompaniments such as naan, onion bhajis & chutneys for a complete dinner
