Choco-Chai Quinoa Breakfast Bowl

Perfect breakfast for a lazy Sunday when you fancy a treat!

Ingredients
- 1 x 250g pouch Merchant Gourmet Simply Cooked Red & White Quinoa
- 2 cups Unsweetened Almond Milk
- 2 Tbsp Raw Cacao
- 1 Heaped Tbsp Maple Syrup
- Pinch Pink Himalayan Salt
- ½ Cinnamon Stick
- 3 x Cardamon Pods
- 1 x Star Anise
To Serve
- Cherries
- Coconut Chips
- Raw Chocolate
- Grated Cinnamon & Nutmeg
Instructions
1.Place the almond milk, cacao, maple syrup and salt in a pan and whisk to combine
2.Add the cinnamon stick, cardamon pods and star anise, and bring to a boil before turning down to a low simmer for around 10 minutes, whisking occasionally
3.Squeeze the quinoa bag to separate the grains. Check the chocolate milk for sweetness … if it needs a touch more maple syrup, add it now
4.Tumble in the quinoa and gently heat for several minutes
5.Serve in a bowl with a few fresh cherries, toasted coconut chips and a square or two of (pref.raw) dark chocolate. Finish with some freshly grated nutmeg and/or cinnamon
