Chocolate and Quinoa Muffins
These muffins give you that sugar fix whilst feeling a little less guilty!
Suitable for vegetarians
- 1 x 250g pouch of Merchant Gourmet Simply Cooked Red & White Quinoa
- 110g plain flour
- 30g cocoa powder
- 130g granulated sugar
- 70g soft brown sugar
- 2 tsp baking powder
- 1/4 tsp bicarbonate of soda
- 1/2 tsp salt
- 50g milk chocolate, chopped
- 2 large ripe bananas
- 2 eggs

1.Pre heat the oven to 180°C. Line a 12-muffin tray with paper cases
2.In a food processor, mix together flour, cocoa powder, white and brown sugars, baking powder, bicarbonate of soda, and salt. Stir in the quinoa and chopped chocolate
3.In a separate bowl, mix mashed bananas and eggs until well blended. Add the wet mixture to the dry ingredients
4.Distribute the batter into the muffin cases until they are 3/4 full. Bake in the oven for 18-20 minutes or until a toothpick inserted into the muffins comes out clean
