Glorious Grains Soup

This is a hearty, warming recipe full of veggie goodness and the fibre of the glorious grains, perfect for a cold winters day

Ingredients
- 1 tbs olive oil
- 1 large red onion
- 3 large garlic cloves
- 1 celery stalk
- 1 large carrot
- ½ red pepper
- 1 x 250g Pouch of Merchant Gourmet Simply Cooked Glorious Grains
- Pinch of sea salt
- 2 tbsp dried mixed herbs
- 1 tsp ground white pepper
- 1 litre stock (stock cube in 1 litre water)
- 1 tbsp tomato puree
- ½ tbsp ground chilli
- 2 cups cavolo nero
- Fresh parsley or coriander and half stalk spring onion to garnish
Instructions
- Heat 1 tbsp olive oil to a large enough pot over a medium to high heat
- Add in finely diced onion and leave to release flavours for two minutes stirring often
- Add in minced garlic, followed by finely chopped celery, carrot and red pepper and reduce the heat to medium and leave the veg to sauté for 5 minutes
- Add in the Merchant Gourmet Glorious Grains and continue to occasionally stir over a medium heat, also adding in salt, pepper and mixed herbs
- Add 1 litre of boiling water to the pot and a stock cube and bring the pot to a rolling boil
- After 2-4 minutes, reduce the heat to medium-low, adding in the tomato puree and ground chilli
- Reduce the heat to low and leave to simmer, adding in the cavolo nero 3-5 minutes before turning off
- Upon serving, garnish with fresh parsley or coriander (or both) and some thinly sliced spring onions
