Greek-Inspired Tacos

A fresher, healthier Taco alternative which is perfect for a mid-week supper.

Ingredients
- 1 x 250g pouch of Merchant Gourmet Simply Cooked Red & White Quinoa
- 1 cucumber, diced
- 6 tomatoes, diced
- 1 red onion, diced
- Juice of 1 lemon
- A pinch of sea salt and black pepper
- 50g light feta, crumbled
- 20 olives, halved
- 8 mini tortillas/soft tacos
For the Tzatziki
- 8 tbsp Greek yoghurt
- Half a cucumber
- Juice of half a lemon
- 2 tbsp fresh mint, chopped
- A pinch of sea salt and black pepper
Instructions
1. In a bowl, mix together the cooked quinoa, cucumber, tomatoes, red onion, lemon juice, salt and pepper, olives and feta
2. In a smaller bowl, mix together the Greek yogurt, cucumber, lemon juice, mint and salt and pepper
3. Divide the Tzatziki between the tortillas and top with the quinoa mixture
