Lentil and Mushroom Burgers
Everyone needs a burger sometimes, feel guilt-free with this healthier version! Still tastes amazing!
Suitable for dairy-free and vegetarians
- 1 x 250g pouch of Merchant Gourmet Simply Cooked Puy Lentils
- 250g mushrooms, chopped
- 2 tsp olive oil
- 3 garlic cloves, crushed
- 2 tbsp mustard
- 1 large carrot
- Handful of fresh parsley, chopped
- 6 tbsp breadcrumbs
- Breadcrumbs for coating the burgers
- 1 egg
- Salt and pepper
- Vegetable oil for frying
1.Heat the lentils as per pouch’s instructions
2.Fry the olive oil and garlic for two minutes in a large pan. Add the mushrooms and carrots and cook until the vegetables have released all their natural water. Lower the heat and add the lentils, mustard, salt and pepper. Cook for a few more minutes until all the ingredients are mixed
3.Remove from the heat and transfer to a large salad bowl to cool down for 15-20 minutes. Add one egg and the six tablespoons of breadcrumbs to the mix. Divide the mix into six portions and make the patties using your hands. Coat the patties in breadcrumbs and place on a tray lined with cling film
4.Heat a few tablespoons of vegetable oil in a frying pan. Fry the patties on both sides for 1-2 minutes, then transfer onto a large plate lined with kitchen paper
