Lentil and Sweet Potato Fritters with Lemon and Basil Yoghurt

Lentils are packed full of healthy goodness. They are rich in dietary fibre, high in protein and a good source of potassium and calcium.  This delicious recipe can be enjoyed for breakfast or lunch.

Ingredients

Instructions

Mix together the sweet potato, lentils, egg, coconut flour, salt and pepper until combined

In a frying pan heat some oil

Using your hands make a patty out of the sweet potato and lentils and drop into the frying pan

Leave to cook before flipping. (roughly 3 minutes). Repeat until all the mixture is used

In a bowl mix together the yoghurt, lemon juice and basil

Serve the fritters with the yoghurt on the side and enjoy!
