Mango, Roasted Cashew Nuts and Glorious Grains Salad

Who says salads have to be boring? Here’s a super easy recipe that takes minutes to make and seconds to enjoy. A mixture of incredible grains high in carbohydrates and a source of protein perfect for post workout. It can be made as a side dish for salmon or chicken or as a main on its own.

Ingredients
- 1 x 250g Merchant Gourmet Simply Cooked Glorious Grains
- 100g Cashew Nuts
- Salt
- Pepper
- 200g Fresh Mango (chopped)
- Coriander (Handful)
- 2 tbsp Lemon Juice
- 75ml Apple Cider Vinegar
- 2 tbsp Olive oil
- 1 tbsp honey or agave syrup
Instructions
Place the cashew nuts in a frying pan over a medium heat. Season with salt and pepper
Using a wooden spoon, keep the cashew nuts moving and leave over the heat until slightly brown then leave to one side
In a separate bowl add the Glorious Grains, mango, coriander and stir well
In a jug mix the lemon juice, apple cider vinegar, olive oil and honey
Pour the dressing over the salad making sure it’s fully coated
Serve on a plate and top with the cashew nuts
