Wheatberry, Beetroot and Almond Salad

A quick and easy salad to prepare with added crunch from the Almonds!

Suitable for vegans and vegetarians


  • 125g pouch of Merchant Gourmet Simply Cooked Wheatberries (half a pouch)
  • 200g mixed spinach and rocket leaves
  • 4 cooked beetroot, halved
  • 20g flaked almonds
  • 16 olives
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • A pinch of sea salt and black pepper


1.Put the spinach and rocket in a bowl and add the olive oil, lemon juice and salt and pepper and mix well

2.Divide the greens between 2 bowls and top with the rest of the ingredients
