Baked Quinoa, Pistachio and Cranberry Granola

Suitable for vegetarians
- 1 x 250g pouch of Merchant Gourmet Simply Cooked Super Red & White Quinoa
- 2 tbsp of coconut oil
- 50g of old fashioned large oats
- 50g rye flakes
- 50g coconut flakes
- 100g pumpkin seeds
- 100g chopped macadamia nuts
- 100g pistachios
- 100g dried cranberries
- 100g dried apricots chopped
- 2 egg whites
- 150g honey
- ½ tsp sea salt flakes
1. Pre-heat the oven to 140C. In a small saucepan, melt the honey, coconut oil and salt together
2.Next, mix all the dry ingredients, apart from the fruit, together
3.Add the coconut oil mix and stir well
4.Whisk the egg whites in a separate bowl and add it to the mixture , to coat the mix
5.Spread the mix onto a baking sheet lined with parchment and bake until golden and crispy, breaking up occasionally to separate the grains. It should take about 30 minutes
6.Once removed from the oven, add the dried fruit and cool. Keep in an airtight container and use at will!
