Puy Lentil, Baby Courgette and Feta Salad

Ingredients
- 1 x 250g Merchant Gourmet Simply Cooked Puy Lentils
- 3 baby courgettes
- 1 small onion
- 60g Plant-based feta cheese
- 100g of sweet peppers
- 100g cucumber, cubed
- handful of fresh mint
- Drizzle of olive oil
- Salt and pepper
Instructions
- Slice the baby courgette, onions and pepper and cube the cucumber
- Heat a pan with a drizzle of olive oil
- Fry the courgette until golden then add the onions, pepper and cucumber
- Once the onions are translucent add the Puy lentils and feta until warm through
- Season to taste then serve
