Quinoa Latkes with Herby Crème Fraîche
This is an delicious meat free meal but you can easily add some meat if you fancy!
Suitable for vegetarians
- 1 x 250g pouch of Merchant Gourmet Simply Cooked Red & White Quinoa
- 2 x raw potatoes, peeled and grated
- 1 egg
- 1 tablespoon plain flour
- salt and pepper
- 2 tablespoons olive oil
- 4 tablespoons crème fraîche
- 1 teaspoon chopped fresh herbs (basil, tarragon, rosemary etc…)

1.Wring the grated potato in a tea towel to remove the moisture. Add to a bowl along with the quinoa, egg, flour and salt and pepper and mix well.
2.Heat the oil in a frying pan over a medium heat and drop spoonfuls of the mixture into the pan. Cook for a few minutes until golden, then turn and cook on the other side until golden.
3.In a small bowl, mix the chopped herbs with the crème fraîche
4.Serve the latkes topped with the herby crème fraîche.
